We use “do” when the sport is a more serious discipline, like a martial art, for instance.

“Play” is used when the sport is a game which is normally played with a ball and an opponent or rival team.

“Go” is used when the sport involves moving from one place to another, whether it be on land, in the water or through the air. Also, these sports are used in a gerund form, so they end in “-ing“.
